Arepas Always Fresh

Shredded beef over Arepa

3 White Arepas Antioqueñas Delicias Andinas 

1 lb pound roast beef (chuck or round roast)

½ tbls Yellow mustard

2 tbls viniger (optional)

2 ripe tomato’s peeled and chopped

2 scallions

2 crushed cloves of garlic 

1 tbls fresh oregano

1 tbls Ground cumin

1¼ cup of beef stock

Salt and pepper to taste

5 tbls corn oil, (or canola)



Season beef with salt and pepper and cook in pressure cooker for 1 hour. When meat is tender, shred with a fork and set aside. In sauté pan heat oil, add crushed garlic and scallions, add a pinch of salt to release juices. Add tomatoes, fresh oregano, cumin, mustard and beef stock. Add beef to sauce and let simmer for 20mins or until beef has absorbed the sauce. Heat the Delicias Andinas telon white Arepas on med heat skillet for 4 minutes on each side. Plate Shredded beef over Arepas, may garnish wit roasted potatoes or avocado. Enjoy!
